Ruby one shouldn't be around for another 4~5 weeks. The first appearance was about 10 weeks after Beru first became free. Current beru is a variation of the mane one.
Next beru quest is in October's first week, it should be the scale one.
So you won't see a chance for this beru until mid-october at the earliest. I'm presuming it'll be either Late October or November when Ruby Beru shows up.
